Really Easy Vegan Lontong Recipe That’s Quick And Tasty

I know all my recipes say “easy” but that’s because I’m not a good cook okaaaayyyy?? I can only do easy. And this lontong recipe is as easy as it gets. Very very yummy too!

Ingredients

  • Vegetables (I use carrots, long beans, cabbage, sometimes eggplant)
  • Tempeh
  • Firm tofu
  • Tofu puffs
  • Coconut milk (santan), 400ml
  • Water
  • Garlic, 4-5 cloves pounded
  • Ginger, 1 inch pounded
  • Red onion, medium and pounded
  • Lemongrass, 2 stalks sliced and pounded
  • Candlenuts (buah keras), 4 softened in water and pounded
  • Turmeric powder, 2 spoonfuls (?) Idk I just eyeball it
  • Salt and sugar
  • Maggi Cukup Rasa seasoning

For non-vegan recipe, I add dried shrimp (udang kering) and a chicken stock cube. But honestly you don’t need it. Vegan still tasty af. No chili in this recipe coz my little kiddies love to eat it. But you can pound a few cili padi in the paste if you want.

Instructions

  1. Slice, salt, and fry the firm tofu. Set aside.
  2. Blend or pound the garlic, onion, candlenuts, ginger, lemongrass, turmeric powder, and salt into a paste. Saute in oil until fragrant.
  3. Add water and bring to a boil.
  4. Throw in your vegetables and let them simmer until soft.
  5. Add coconut milk and remember to keep stirring so it doesn’t break and look ugly.
  6. Season with salt, sugar, and Maggi Cukup Rasa
  7. Add the fried tofu and tofu puffs
  8. Serve hot over nasi impit

I don’t know how to many kuah kacang or sambal so Mr Ninja just ate sambal out of a jar haha. Sorry love, maybe next year.

Prep takes a long time because of all the cutting and chopping and pounding

I prepped everything the night before and cooked the lontong the next morning. Cooking time is like 20 minutes? Super fast.

Lontong is creamy and rich, a little sweet, very flavourful

I like it so much. I’m so proud of this one haha. My family actually ate it. They usually don’t. Both my mum and my brother messaged me after Raya to say they loved it because they were eating the leftovers I packed for them haha.
